When it comes to authentic Indian cookery, there’s no doubt that Murrali Dharan knows a trick or two. The 43-year-old, who hails from Madras in India, has spent many years cooking in luxury hotels across the world. Last year, he joined the Eastern Eye team where he has been making his mark.

Favourite dish:
My own personal favourite on our menu is the swordfish achari. This is grilled fillets of swordfish in a hot curry with pickling spices. I used to eat a lot of seafood when I lived in Madras so that appeals to me.
Future plans for the restaurant?
I aim to put more seafood on the menu as well as some more authentic new dishes.
